5 Tasty Dishes for a Vegetarian Thanksgiving

Who needs turkey when you can have all the fixins (along with some extra servings of healthy veggies) on a bun? This all-veggie patty is made with black beans, red bell pepper, onion, garlic and lots of amazing spices. Best of all, it’s topped with all your favorite turkey day sides. Start with our easy Black Bean Slider recipe, add a few dashes of chili powder and cumin, and mix in some leftover stuffing. Top with mashed potatoes, green beans, gravy…whatever your taste buds desire!

Hearty Vegetable Stew

If you’re looking for something a bit more filling than the traditional veggies sides, this stew should serve up just the solution. It combines the satiating goodness of beans with some amazing veggie flavors to create a mouthwatering dish that will have your guests clamoring for seconds (or thirds). All you need to do is take our hearty Three Bean Stew recipe, replace the beef broth with vegetable broth and leave out the sausage. Feel free to add in any additional veggies and spices you’d like. The more the merrier!

Vegetarian Thanksgiving Wraps

This recipe is great for several reasons. First, it’s super easy and fast to prepare (~30 minutes start to finish). Second, it’s totally meat-free. And third, it’s packed with the perfect combination of complementary flavors. To make, combine two cups of sweet potatoes with one can of Hanover Foods chickpeas, tossed in grapeseed oil and your favorite spices (think cinnamon, cumin, paprika, thyme, etc.). Bake at 400 degrees for 25 minutes (turning at the halfway point). Spoon onto your favorite wrap, add whatever topping or dressing you fancy, and voila!

Veggie Pizza

Everybody loves a good pizza pie, right? Well, now you can put your passion for pizza to work and keep your vegetarian guests happy and full. Our basic Veggie Pizza recipe calls for everything from green and red peppers to mushrooms and chopped spinach, all brought together with the creamy richness of ricotta and mozzarella cheese. Of course, if you have another preference or are feeling a little creative, feel free to add any other vegetarian-friendly toppings you’d like. Go ahead – make it your own!

Vegetarian Shepherd’s Pie

Nothing says down-home comfort food for the holidays quite like a hearty shepherd’s pie. Unfortunately, most traditional recipes feature beef or lamb as the main ingredient. If you’re creative enough and have the right ingredients, however, you can knock this family favorite out of the park without a single stitch of meat. To cook, sauté one medium onion and two cloves minced garlic. Add 1 ½ cups uncooked lentils, four cups vegetable stock, and one 10 oz. bag Hanover frozen mixed veggies and cook. Transfer to a baking dish, top with cooked mashed potatoes and bake at 425 for 10-15 minutes until browned.
