3 Tasty Summer Treats for Kids
Summertime comes with the added task of keeping active kids fueled up for fun in the sun. But before you head to the supermarket snack aisle to stock up on chips and other salty, sugary and processed food products, consider the following healthier alternatives. They don’t take much time to prepare and more importantly, they contain natural ingredients that will curb your kids’ cravings while also supplying the vitamins and nutrients their little bodies need.
If your kiddos have an affinity for a certain store-bought orange cracker that shall remain nameless, this homemade substitute is sure to please. Not only does it call for just four simple ingredients, but one of those ingredients happens to be a veggie (though the little ones won’t tell the difference). All you need for this snack is 1 ½ cup Hanover Foods Small Crinkle Sliced Carrots, ½ cup shredded cheddar, 1 cup whole grain flour and 2 eggs.
Blend the carrots, cheese and eggs in a food processor. Add the flour ¼ cup at a time, pulsing in between until you reach a dough consistency. Roll the dough on a floured surface to ¼ inch thick and cut into whatever shapes you’d like. Sprinkle with salt, bake on a parchment paper-covered cookie sheet or silicone baking mat at 350 degrees for 15-20 minutes until slightly browned and crispy. Cool and serve. The sweetness of strawberries and rich color of beets make a perfect combo for beating the heat while also boosting fruit and veggie intake.
To make, simply combine 1 ½ cups of frozen strawberries, ½ cup Hanover Foods Red Beets (cooked and cooled), ¾ cup apple juice and 1 teaspoon lemon juice or balsamic vinegar. Puree on high in a blender until completely smooth. Pour mixture into popsicle molds, freeze and serve. Trust us – your little ones will be begging for these all summer long!
