4 Ways to Make Veggies the Star of Taco Tuesday

Tacos aren’t exactly the healthiest meal, but for many of us, they’re hard to resist. The good news is, there are plenty of ways you can introduce more wholesome options into your menu. In fact, we’ve got some delicious, nutritious veggie-based recipes and side dish ideas that will enhance your Taco Tuesday and have everyone in the family diving in for seconds (or thirds). Check out a few of our suggestions below.

Sweet Corn and Black Bean Tacos

Who says you need meat to make tacos? Not us! This vegetarian option is bursting with mouthwatering flavor, and because it’s made with black beans, it’s also got lots of healthy, filling fiber. Start with our Latino Blend, which features a delicious mixture of sweet corn, black beans, peppers, and onions. Once heated, spread the mix onto the tortillas of your choice and enjoy. For an added kick, include a slice of fresh avocado and top with salsa, pickled jalapeños or hot sauce.

Fantastic Fajitas

Another popular Mexican dish that’s perfect for spicing up Taco Tuesday is fajitas. But what if you’re in a rush and don’t have time to prep? Don’t sweat it. Just grab a package or two of our Green & Red Peppers and Onion Strips. Picked and packaged at the peak of freshness and already conveniently sliced, all you need to do is heat and serve. Mix them in with your favorite fajita base, like steak, chicken or shrimp. Serve with salsa, sour cream and the rest of the fixings and you’ve got an easy, fast and delicious meal.

Black Beans and Rice

Nothing says authentic Mexican food quite like beans and rice. We’ve got you covered with our convenient steam-in-bag Brown Rice, Black Beans, Peppers and Onions mix. All you have to do is pop the package in the microwave for a few minutes and you’ll have a tasty side dish that’ll go perfect with your tacos. No extra work. Just heat and serve. Yum!

Homemade Corn and Bean Salsa

Why use the jarred stuff when you can make your own fresher and much healthier version? The good news is, it’s much easier than you may think. Start with a package of our White & Yellow Corn with Black and Pinto Beans. Mix with a can of drained, diced tomatoes. Add in some chopped onion, two tablespoons of fresh lime juice, a tablespoon of olive oil, a teaspoon of chili pepper, ¼ teaspoon of salt and a tablespoon of fresh, chopped cilantro (optional). Mix well, chill and serve as a side or taco topping.

Taco Tuesday doesn’t have to include the same old thing every week. It can also be much healthier! Spice up your weekly menu by incorporating a few of the ideas above. Not only will your taste buds be happy, but with an extra serving of veggies, your body will appreciate it too!
