INSTRUCTIONS
1. Empty the beans into a large saucepan and just cover with water or chicken broth. Cook on medium-low heat until warm. Make sure there is enough room to add the rice and corn.
2. Steam the Cauliflower rice using the microwave according to directions.
3. Steam the White Sweet Corn using the microwave according to directions.
4. Drain the beans and return them to the saucepan.
5. Stir in the rice and corn. Season with cumin, chili powder, salt, and pepper. Cook for another 3–
4 minutes until warmed.
6. Stir frequently until everything is evenly coated and heated through.
7. Divide into bowls and top with your queso, salsa, added protein, shredded cheese and any
other favorite toppings.
8. Serve warm with a squeeze of fresh lime and tortillas, if desired

Ingredients
• 2 or 3 15.5oz cans of assorted Hanover Foods beans (we suggest black, chili, navy or pinto beans).
• 1 package of Hanover White Sweet Corn or Air Fryer Mexican Street Corn
• 1 package Hanover Cauliflower Rice or your favorite rice
• ½ cup shredded cheese or queso – or both!
• Water or chicken broth
• 1 teaspoon cumin
• ½ teaspoon chili powder
• Salt and pepper, to taste
• Salsa or hot sauce. We like “Christmas” a combo of red and green salsas.
