Hanover Lemon Arugula Dense Bean Salad

INSTRUCTIONS
- In a large bowl, combine the drained pinto, black, and great northern beans.
- Add the roasted garbanzos and sweet potato cubes
- Add the arugula, gently tossing to combine.
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper.
- Pour dressing over the salad and toss until evenly coated.
- Finish with crumbled feta and adjust seasoning as needed.

- 1 15.5oz can Hanover Foods Pinto Beans, drained and rinsed
- 1 can Hanover Foods Black Beans, drained and rinsed
- 1 can Hanover Foods Great Northern Beans, drained and rinsed
- 1 can Hanover Foods Garbanzo Beans, drained or roasted (see recipe)
- 2 cups arugula
- 1 large, sweet potato, peeled, roasted, and cubed
- ½ cup crumbled feta cheese
Lemon Dressing or use your favorite vinaigrette
- ¼ cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 clove garlic, minced
- Salt and pepper, to taste
