Chickpea Cauliflower Risotto

Ingredients
- 1 Large Onion Chopped
- 2 cups Hanover Foods Riced Cauliflower cooked according to package directions
- 2 tbsp Coconut Oil
- 29 oz Hanover Foods Crushed Tomatoes
- 19 oz Hanover Foods Chick Peas Rinsed and Drained
- 2 tsp Vegetable Broth
- 1 tsp Parsley
- 1 tsp Oregano
- 1 tsp Basil
Instructions
- In a large pot with a tight fitting lid, sauté onion in coconut oil.
- When the onion becomes golden, add the Riced Cauliflower and stir for two minutes.
- Add tomatoes, water, chick peas, broth, seasonings, and stir well.
- Simmer uncovered until liquid is reduced.
